Vegan Sloppy Joe’s: Tasty, Nutritious, And Awesome

Great new recipe today.  It also works great with and without Incredible Greens.

If you’re like me you looove the taste of a homemade sloppy joe.  The sweet tomato sauce and the savory meat is irresistable.

Well, here’s a great vegan alternative!

Prep time: 20 minutes;  Cook Time: 25 minutes

Ingredients

1 bag lentils

1 bell pepper

1 onion (I used a red pepper)

2 tbsp worcestershire sauce

3 tbsp agave nectar

3 tbsp ketchup

2 tbsp mustard

1 tbsp minced garlic

1 tsp chili pepper

1/2 cup water

1 can (16 oz) tomato sauce

1 scoop Incredible Greens

1 tbsp apple cider vinegar

splash of lemon juice

salt and pepper to taste.

Step 1:

Begin to boil lentils before chopping peppers and onions.  Boil for about 15 minutes or until tender.

Step 2:

Saute diced pepper and onion in a large skillet over medium heat.  Add water if they begin to dry out.

Step 3:

Drain lentils after they’re finished.

Stir into large skillet.

Step 4:

Mix in other ingredients and simmer over low heat for about 5-10 minutes until flavors have blended and the appropriate thickness has been reached.

Enjoy this delicious, vegan take on an American classic!

I’ve made this dish several times and like it quite a bit.  Sloppy Joe’s are delicious and lentils are some of the most nutritious foods on mother earth.

They’re packed with fiber, protein, iron, and many other nutrients that are commonly found in meat.

The only caveat is that since they’re so small sometimes it can be difficult to get  the traditional thickness of regular sloppy joe’s.  Don’t add water or add more ketchup if the mixture is too thin.

If you’d like you can also substitute tempeh for lentils.  This gives the sloppy joe a little more chewyness and grit.

Incredible Greens

This sort of recipe is great for using Incredible Greens with if you’re looking for something to mask the color and flavor.

The deep red color of the tomatoes masks the green color of Incredible Greens and the thick, sweet flavor of the sauce makes it undetectable.

  1. Hi, i happened to stumble onto your blog and the first thing i saw was this veggie burger… how can any one eat healthy and use regular white enriched flour buns? the sesame seeds on top don’t change any thing!

  2. I was thinking the same thing. And anything in a can is horrific! Get rid of the bun and tomato sauce! Try some fresh tomatoes instead.

  3. LOL, you guys are a tough crowd! Will keep these ideas in mind for next time. You could definitely substitute whole wheat pitas easily enough, but I think for most people homemade tomato sauce might be prohibitive.
