Recipe: Easy Apple Pumpkin Stew

Greetings everybody!

Today a loyal reader named Sa was nice enough to volunteer one of her favorite healthy recipes: apple pumpkin stew.

This recipe is easy to make, vegan friendly, and very tasty with no harmful ingredients.  It takes me back to my college days. I was a vegetarian on a budget, and pumpkin stew was one of my staple recipes.

Apple Pumpkin Stew

This hearty dish is great in winter and when you have unexpected dinner guests.

The great thing about pumpkins is that they  grow anywhere from the city backyard to the lovely country vegetable garden. There are no sinful ingredients with this  recipe. No sugar, flour, or preservatives and  it caters to vegans and vegetarians so everyone can enjoy it no matter what their dietary preferences are. And it freezes wonderfully!

Ingredients

  • 1/2 regular sized pumpkin peeled and chopped
  • 2 tablespoons vegetable/olive oil
  • 1 tsp curry powder
  • 1 tsp turmeric
  • 1 tsp tamarind
  • pepper and salt to taste
  • 2 onions diced
  • fresh thyme
  • 4 cloves chopped garlic
  • 2 or 3 apples peeled and chopped
  • 1 or 2 vegetable stock cubes (depending on individual taste- may add 2nd one if desired at the end before pureeing).
  • 2 cups boiling water
  • cream, yoghurt, soy cream or soy yoghurt for the vegans or vegetarians
  • add extra seasoning to taste

Directions

  • gently heat oil over moderate heat in large pan
  • add herbs and cook gently over heat for 2-4 minutes
  • add onion, garlic, and thyme and cook until onions are translucent
  • add chopped pumpkin
  • add chopped apple until all ingredients are well mixed and apples begin to soften
  • add hot/boiling water and vegetable stock
  • continue to simmer until all ingredients are tender

Add cream or yogurt on top when finished.
